Super Bowl in my house is a great chance to have a buffet of all different kinds of food, and with that in mind, here our a couple of my favorites.

Smoked Sausage sandwiches:

  • 6 smoked sausage links
  • One onion, cut into strips
  • One red or green pepper, cut into strips
  • 6 crusty sub rolls
  • Spicy brown mustard or stone ground mustard, your choice.

Heat a large skillet over medium heat, add 1T. Vegetable oil, when warm, add your links one at a time, leaving space between them, so they can caramelize. Turning to get a nice sear on each side.

When they are browned all over, remove from the pan, and set aside. In the pan with the leftover oil add cut up onions, and peppers and saute them until tender, about 5 minutes. Toast the buns in the oven at 350 until warmed. Remove add your caramelized onions and peppers and put your mustard of choice on top and serve.

Sausage links with pineapple:

  • 1 package of little smokies
  • 1 can pineapple chunks with juice
  • 3 T. Brown sugar
  • 1/2 green pepper, diced

In a small sauce pan, over medium heat combine all ingredients, and heat through, about 10 minutes. Pour into a serving dish, and use frill toothpicks to eat with.

Cheesy pizza dip:

  • 1#, 16oz, Velveeta cheese, cut into 1/2" cubes
  • 1 tomato, chopped
  • 24 pepperoni slices, chopped

Combine all ingredients in a 1 1/2 quart microwave bowl. Microwave on high 4-5 minutes until all the Velveeta is melted. Serve it with cut up vegetables, and bread sticks.

It's the Super Bowl, the main goal for the day is to hang out with family and friends, enjoy the game and eat some good food.
